While raising a family, I cooked a lot because, well, I had to. Now that everyone is older, I cook what and when I like. It’s filled with carrots, onions, red peppers, and other vegetables and seasoned with sage, rosemary, and balsamic vinegar. After combining and seasoning the ingredients, you simply put them on a cooking sheet and bake it in the oven.
Here’s another favorite, One-Pan Roasted Chicken and Carrots with onions and garlic. I add celery and sliced potatoes. It’s seasoned with olive oil, salt, pepper, a little Lawry’s seasoning if you like, and rosemary. YUM and done!
